Zaalouk (Eggplant Dip)

Introduction

Zaalouk is a delicious spiced eggplant puree, a staple in Moroccan cuisine. This flavorful dip is often served as an appetizer or as a side dish with bread. With its aromatic blend of cumin and paprika, it will bring a Mediterranean touch to your meals.

Ingredients

  • 2 large eggplants
  • 2 tomatoes, peeled and diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh coriander for garnish

Preparation time: 15 minutes
Cooking time: 30 minutes

Preparation

  1. Preheat the oven to 200°C (400°F). Place the whole eggplants on a baking sheet and roast in the oven for about 30 minutes or until tender.
  2. Meanwhile, heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent.
  3. Stir in the diced tomatoes, cumin, paprika, salt, and pepper. Let simmer for about 10 minutes until the tomatoes are cooked down.
  4. Once the eggplants are done, cut them in half and scoop out the flesh with a spoon. Add the eggplant flesh to the skillet and mix well.
  5. Let it cook for another 5 minutes while stirring. Serve hot or at room temperature, garnished with fresh coriander.
