Zaalouk (Eggplant Dip)
Introduction
Zaalouk is a delicious spiced eggplant puree, a staple in Moroccan cuisine. This flavorful dip is often served as an appetizer or as a side dish with bread. With its aromatic blend of cumin and paprika, it will bring a Mediterranean touch to your meals.
Ingredients
- 2 large eggplants
- 2 tomatoes, peeled and diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh coriander for garnish

Preparation
- Preheat the oven to 200°C (400°F). Place the whole eggplants on a baking sheet and roast in the oven for about 30 minutes or until tender.
- Meanwhile, heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent.
- Stir in the diced tomatoes, cumin, paprika, salt, and pepper. Let simmer for about 10 minutes until the tomatoes are cooked down.
- Once the eggplants are done, cut them in half and scoop out the flesh with a spoon. Add the eggplant flesh to the skillet and mix well.
- Let it cook for another 5 minutes while stirring. Serve hot or at room temperature, garnished with fresh coriander.
