Moroccan Harira – Traditional Ramadan Soup
Introduction

Ingredients

- 🧅 1 large onion, finely chopped
- 🥬 2 celery stalks, chopped
- 🍅 2 ripe tomatoes, peeled and diced
- 🌱 1/2 cup green lentils, rinsed
- 🥫 1/2 cup canned chickpeas, drained and rinsed
- 🌿 1/4 cup fresh parsley, chopped
- 🍃 1/4 cup fresh cilantro, chopped
- 🥄 1 teaspoon ground ginger
- 🌕 1 teaspoon turmeric
- 🍂 1 teaspoon cinnamon
- 🧂 Salt and pepper to taste
- 🥣 6 cups vegetable or chicken broth
- 🍝 1/2 cup vermicelli noodles
- 🍋 Lemon wedges for serving

- Heat olive oil in a large pot over medium heat. Add the onion and celery, and sauté until softened.
- Stir in the tomatoes, parsley, cilantro, ginger, turmeric, cinnamon, salt, and pepper. Cook for a few minutes until fragrant.
- Add the broth and lentils. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the chickpeas and vermicelli noodles. Continue cooking for another 15-20 minutes, until the noodles and lentils are tender.
- Adjust seasoning if necessary, and serve hot, garnished with fresh lemon wedges.
