Introduction

Ingredients

  • 🧅 1 large onion, finely chopped
  • 🥬 2 celery stalks, chopped
  • 🍅 2 ripe tomatoes, peeled and diced
  • 🌱 1/2 cup green lentils, rinsed
  • 🥫 1/2 cup canned chickpeas, drained and rinsed
  • 🌿 1/4 cup fresh parsley, chopped
  • 🍃 1/4 cup fresh cilantro, chopped
  • 🥄 1 teaspoon ground ginger
  • 🌕 1 teaspoon turmeric
  • 🍂 1 teaspoon cinnamon
  • 🧂 Salt and pepper to taste
  • 🥣 6 cups vegetable or chicken broth
  • 🍝 1/2 cup vermicelli noodles
  • 🍋 Lemon wedges for serving

  1. Heat olive oil in a large pot over medium heat. Add the onion and celery, and sauté until softened.
  2. Stir in the tomatoes, parsley, cilantro, ginger, turmeric, cinnamon, salt, and pepper. Cook for a few minutes until fragrant.
  3. Add the broth and lentils. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. Add the chickpeas and vermicelli noodles. Continue cooking for another 15-20 minutes, until the noodles and lentils are tender.
  5. Adjust seasoning if necessary, and serve hot, garnished with fresh lemon wedges.
