Moroccan Beef Tagine (Beef Stew with Tomatoes & Onions)

Ingredients
- 600 g beef (shoulder or neck), cut into chunks
- 2 onions, sliced
- 3 tomatoes, peeled and diced
- 3 garlic cloves, minced
- 1 tablespoon ground ginger
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 teaspoon paprika
- 4 tablespoons olive oil
- 500 ml beef broth
- Salt and pepper to taste
- Fresh coriander for garnish

Preparation
- In a tagine or large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until translucent.
- Add the beef chunks and brown on all sides.
- Stir in the tomatoes, ginger, cumin, cinnamon, paprika, salt, and pepper. Mix well to coat the meat with the spices.
- Pour in the beef broth, cover, and let simmer on low heat for about 1 hour and 30 minutes, until the meat is tender.
- Serve hot, garnished with fresh coriander.
